Caramel Chocolate Chip Cookies

Caramel is a beige or dark-brown confectionery product made from sugar. Caramel has been used as a flavoring in puddings and dessert, and depending on the type of sugar, caramel will have different tastes. Nowadays, we don’t only have caramel as a dessert flavoring but also caramel candy, milk caramel, cream caramel and many other delicious sweet treat.

There are many dessert recipes using caramel as one of the ingredients and cookie is not an exception. Our recipe today will have amazing texture and flavor coming from the combination between chocolate chip cookies and caramel. We call them as caramel chocolate chip cookies.

Ingredient (prep will take about 15 minutes)

  • 3 cups of All Purpose Flour
  • 1 teaspoon of Baking Powder
  • 1 teaspoon of Baking Soda
  • ¼ cup of Sugar
  • 2 Eggs (separate the white and egg york)
  • 1 cup of Unsalted Butter
  • 2 tablespoons of Vanilla
  • 2 cups of Chocolate Chips
  • 12 Caramels

For homemade caramel:

  • 2 cups of Sugar
  • ¼ cup of Light Corn Syrup
  • ½ cup of Water
  • ½ cup of Heavy Cream
  • 2 tablespoons of Unsalted Butter
  • 1 teaspoon of Vanilla Extract
  • Pinch of Salt

Cooking (cooking will take about 20 minutes)

Step 1 – preheat the oven: Before you start any cooking, remember to preheat the oven to 350 degrees.

Step 2 – make caramel: You definitely can purchase caramels at store and use them in this recipe. Then unwrap them. However, if you prefer everything is homemade, then we will show you how to make homemade caramel. It is supper fast and easy.

Mix 2 cups of sugar, ¼ cup of light corn and ½ cup of water into saucepan and bring the mixture to boil over medium-high heat. Stir constantly during the process until sugar is dissolved. Then let the mixture turn into light amber color (don’t stir) and reach 320 degrees (use a candy thermometer) which will take about 8 to 10 minutes. Remove the mixture from the heat, slowly add ½ cup of heavy cream, 2 tablespoons of unsalted butter, 1 teaspoon of vanilla extract and a pinch of salt into the sugar mixture. Whisk all the ingredients together. When all ingredients are combined, put the mixture back to low heat and whisk until the caramel is smooth and your caramel is ready. Remember, caramel is very easy to burn and overcooked so you should keep your eyes on it.

When the caramel is chilled, pour it into a flat container and put it into fridge until it gets hard. Take the caramel out and cut them into 12 or 24 small cubes.

Step 3 – prepare the cookie batter: Add 3 cups of all purpose flour (you should sieve the flour before put it in), 1 teaspoon of baking powder, 1 teaspoon of baking soda and combine all of them in a large bowl.

In another bowl, put in 1cup of unsalted butter and beat it with hand mixer. While whisking, slowly add ¼ cup of sugar, 1 cup of brown sugar and egg whites. Keep whisking until the bubbles begin to form and the mixture has a soft peak. Then add 2 egg yorks and 2 tablespoons of vanilla into the mixture. When the mixture is slightly firm, add flour mixture, divide into 2 or 3 turns and blend them with hand. When the mixture is well mixed, add 2 cups of chocolate chips and stir until they are combined.

Step 4 – bake the cookies: Line a baking sheet, you can cover the baking sheet with parchment in order to prevent greases and you can clean it easier later. Use a spoon or an ice cream scoop to take out the cookie batter and form the dough into ball shape. Push one of the caramel cubes into the middle of the cookie ball and roll so the dough completely covers the caramel cube.

Place the cookies dough onto baking sheet. Remember to put 2-inch gap between dough balls because the dough will expand while baking. Bake them for about 12 minutes. Keep the eyes on them so they are not overcooked and burned. Smaller size will need less baking time.

The recipe will give you 12 to 24 caramel chocolate chip cookies depending on the size of your dough and caramel cubes. The cookies will have crispy skin and melted caramel inside which will give your mouth fantastic flavor. You can keep the cookies in airtight container for about 2 or 3 days.
